Bakers Delight–Inspired Finger Buns with Cream Cheese Frosting

I N G R E D I E N T S
For the dough
For the dough:
4 cups (600 g) bread or plain flour
2 tsp instant yeast
¼ cup (55 g) caster sugar (or ⅓ cup monkfruit/erythritol blend)
1 cup (250 mL) warm full-cream milk
⅓ cup (80 mL) warm water
60 g unsalted butter, softened
1 egg, lightly beaten
½ tsp salt
Optional: ½ cup sultanas
For the icing:
125 g cream cheese, softened
25 g unsalted butter, softened
2–3 tbsp maple syrup
1 tsp vanilla essence
Desiccated coconut or sprinkles, to finish

Combine warm milk, warm water, yeast, and 1 tsp of the sugar in a jug. Stir and let sit for 10 minutes, or until frothy.
In a large bowl, mix flour, remaining sugar, and salt. Rub in butter until the mixture is crumbly, then add the egg and yeast mixture. Stir until a soft dough forms.
Knead for 10 minutes by hand (or 5–7 minutes in a mixer) until smooth and elastic. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Punch down dough, divide into 12 even pieces, and roll each into a smooth log about 10–12 cm long. Arrange on a lined tray, cover, and let rise again for 30 minutes.
Preheat oven to 200 °C (fan 180 °C). Bake for 12–15 minutes, or until light golden. Cool completely before icing.
To make the frosting, beat cream cheese and butter until smooth. Add sweetener and vanilla; beat again until fluffy. Gradually mix in milk until spreadable. Tint pink if desired.
Spread frosting thickly over cooled buns and finish with coconut or sprinkles.
