
Cherry Coconut Bliss Slice

Makes: 9–12 slices • Prep Time: 15 mins (+ chill time)
I N G R E D I E N T S
For the dough
For the base:
2 cups shredded coconut
1 cup frozen cherries, thawed & finely chopped
4 Medjool dates, finely chopped or blended into paste
2 tbsp chia seeds
2–3 tbsp maple syrup (adjust to taste)
1 tsp vanilla extract
Pinch of salt
For the topping:
200 g dark chocolate
1 tsp coconut oil
Directions
Finely chop the cherries. If they’re quite wet, lightly pat dry.
Finely chop or blend the dates into a sticky paste.
In a bowl, mix together the shredded coconut, chia seeds and salt.
Add the cherries, dates, maple syrup and vanilla. Mix until well combined.
Let the mixture sit for 5–10 minutes to allow the chia seeds to bind.
Press firmly into a lined square tin, smoothing and compacting tightly.
Freeze for 45–60 minutes until firm.
Melt the chocolate with coconut oil until smooth, then pour generously over the slice.
Return to the fridge or freezer until set. Slice using a warm knife.
