Chicken & Broccoli Nuggets

Makes: 18-24 Nuggets Prep Time: 15 Mins Cook Time: 15 Minutes


I N G R E D I E N T S


  • 1 head of broccoli

  • 500 g chicken mince

  • ½ cup panko bread crumbs

  • ½ cup grated cheddar or tasty cheese (or more to taste)

  • 2 eggs

  • Pinch of salt

  • Pinch of pepper

  • Pinch of garlic powder


D I R E C T I O N S


  1. Preheat oven to 180°C (350°F). Line a baking tray with baking paper.

  2. Steam or boil broccoli until tender, then chop finely.

  3. In a large bowl, combine chicken mince, panko bread crumbs, cheese, eggs, broccoli, salt, pepper, and garlic powder.

  4. Mix well with your hands until evenly combined.

  5. Shape mixture into nugget-sized patties and place on prepared tray.

  6. Bake for 15 minutes, or until golden and cooked through.

  7. Serve warm and enjoy!



N o t e :


Store in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.

To reheat, pop in the air fryer or oven until warmed through and lightly crisp again.

Perfect for lunchboxes, dinner with veggies, or snack plates for little ones.
