For the dough
2 sheets puff pastry (thawed slightly, but still cold)
⅓ cup pizza sauce (or tomato paste mixed with 1 tsp olive oil + pinch of oregano)
¾ cup grated cheese (cheddar, mozzarella, or a mix)
3 slices ham, finely chopped
1 tsp dried Italian herbs (optional)
1 egg, lightly beaten (for brushing)

Preheat oven to 200°C fan forced and line a baking tray with baking paper.
Lay one sheet of puff pastry flat on your bench and spread half of the pizza sauce evenly over it, leaving a small border around the edges.
Sprinkle half the cheese evenly over the sauce, followed by half the chopped ham. If you’d like a little extra flavour, add a light sprinkle of dried Italian herbs.
Starting from one edge, roll the pastry up tightly into a log and gently press the edge to seal. Repeat with the second sheet.
Use a sharp knife to cut each roll into 2 cm thick slices and place them cut side up on the tray, leaving space for them to puff up as they bake.
Brush each scroll lightly with the beaten egg.
Bake for 20–25 minutes, or until golden brown and crisp.
Allow them to cool slightly before serving, they’re best enjoyed warm while the cheese is still gooey.

You can totally get creative with your toppings. Try adding pineapple for a Hawaiian twist, swap the ham for cooked chicken, or add a little spinach and feta for a more grown-up version. The options are endless!
