Hidden Veggie Mac & Cheese

I N G R E D I E N T S
For the dough
250 g macaroni (or pasta of choice)
1 tbsp olive oil or butter
1 cup cauliflower florets
1 cup diced pumpkin or sweet potato
1 cup milk (dairy or oat)
1 cup grated cheese (tasty or cheddar)
¼ cup cream cheese (optional for extra creaminess)
1 tsp garlic powder
1 tsp onion powder
D I R E C T I O N S
In a saucepan, cover cauliflower and pumpkin with water. Boil until soft, about 10–12 minutes. Drain and set aside.
Add the cooked veggies, milk, and cream cheese to a blender and blend until smooth and creamy.
Stir in the garlic powder and onion powder, then blend again for a few seconds until combined.
Pour the blended veggie sauce into a large pan and warm over low to medium heat.
Stir through grated cheese until melted and smooth. Season with salt and pepper to taste.
Cook pasta according to packet instructions, drain, and toss through the sauce until evenly coated.
Optional: transfer to a baking dish, sprinkle with extra cheese, and bake at 180°C for 10 minutes until golden and bubbly.
N o t e :
You can get creative with the veggies you use. Try adding zucchini, sweet corn, or even a handful of spinach for an extra boost. It’s the perfect creamy comfort meal that’s secretly full of goodness.
I also love freezing this mac and cheese into portions using a muffin tin. once frozen, I pop them into a container or reusable bag for an easy grab-and-go meal.
