Lemon Bliss Balls

Makes: 10-12 Balls Prep Time: 15 Mins Chill Time: 1-2 Hours


I N G R E D I E N T S


  • 1 cup desiccated coconut (plus extra for rolling)

  • 1 cup almond meal

  • ½ cup cashews

  • Zest of 1 lemons

  • Juice of 1 lemon

  • 2 tbsp honey or maple syrup

  • 2 tbsp coconut oil, melted

  • 1 tsp vanilla extract


D I R E C T I O N S


  1. Place cashews in a food processor and pulse until finely ground.

  2. Add almond meal, coconut, lemon zest, lemon juice, honey, coconut oil, and vanilla.

  3. Blend until mixture comes together and is sticky.

  4. Roll mixture into small balls, then coat in extra desiccated coconut.

  5. Place on a tray and refrigerate for 1–2 hours until firm.

  6. Store in an airtight container in the fridge for up to 1 week.



N o t e :


Store in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.

If frozen, simply pop one out and let it sit for 10–15 minutes before enjoying (or pop it straight into a lunchbox to thaw by snack time).
