Mango Coconut Chia Puddings

Makes: 4 serves Prep Time: 10 minutes + chilling


I N G R E D I E N T S

For the doug

  • 500ml coconut milk

  • 2 cups frozen mango chunks, divided

  • 170g vanilla or Greek yoghurt

  • 12 tbsp chia seeds (3 tbsp per serve)

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract



D I R E C T I O N S


  1. Add 1 cup of the mango, yoghurt, coconut milk, maple syrup and vanilla to a blender.

  2. Blend until smooth and creamy.

  3. Add 3 tbsp chia seeds to each of 4 jars or containers.

  4. Divide the mango coconut mixture evenly between the jars and stir well to combine with the chia seeds.

  5. Add ¼ cup of the remaining mango to each jar.

  6. Refrigerate for at least 3–4 hours, or overnight, until the chia seeds have thickened and the puddings are creamy.

  7. Give each pudding a good stir before serving and enjoy! 🥭🥥✨

Serving idea: Top with additional yogurt or coconut flakes.
